Ingredients

¾ cup butter, softened  
½ cup white sugar
½ cup light brown sugar
2 eggs
1 teaspoon vanilla extract
1 tablespoon espresso powder
¾ cup sour cream
2 cups all-purpose flour
1 teaspoon baking soda
½ cup cocoa powder

Glaze

3 ounces semi-sweet chocolate
2 tablespoons butter
1 tablespoon light corn syrup

Method

Begin by preheating your oven to 325F (165C). Grease and line a 9×5 inch loaf pan and set aside.

In the bowl of a standing mixer (or a large bowl if making by hand), cream together the butter, sugars, and eggs until light and fluffy. Add the vanilla extract and espresso powder, and mix until just combined.

In another bowl, whisk together the sour cream, flour, baking soda, and cocoa powder. Add this mixture to the mixer and mix on low until just combined.

Pour the batter into your loaf pan and bake for 45 minutes, or until a knife inserted comes out clean.

Once finished baking, rest for 10 minutes before turning out onto a wire rack to cool completely.

To make the glaze, melt together all the ingredients in a double boiler. Once melted, spread the glaze all over the cake. Leave to set before serving.
