Sour Cream Chocolate Pound Cake – A Sweet Fusion of Indulgence
Ahhh, our beloved chocolate pound cake. Rich, dense, and undeniably decadent, this much-loved dessert has been tantalizing taste buds for centuries. But with the addition of a few extra ingredients, a classic can become an entirely new culinary experience. That is certainly the case with this Sour Cream Chocolate Pound Cake.
While still remaining true to its roots, this variation has a few surprises up its sleeve! Notably, it features the unusual addition of a cup of sour cream. The results? An incredible contrast of textures, with a moist and tender center, and a crackly and graham-cracker-like crust. Not to mention an explosion of flavor, with the creamfulness of the sour cream, and the sweetness of the cocoa and sugar.
But of course, no cake is complete without the perfect glaze. Which is why we used a hefty dose of semi-sweet chocolate in ours! Not too sweet and not too bitter, this glaze adds another layer of indulgence.
¾ cup butter, softened
½ cup white sugar
½ cup light brown sugar
1 teaspoon vanilla extract
1 tablespoon espresso powder
¾ cup sour cream
2 cups all-purpose flour
1 teaspoon baking soda
½ cup cocoa powder
3 ounces semi-sweet chocolate
2 tablespoons butter
1 tablespoon light corn syrup
Begin by preheating your oven to 325F (165C). Grease and line a 9×5 inch loaf pan and set aside.
In the bowl of a standing mixer (or a large bowl if making by hand), cream together the butter, sugars, and eggs until light and fluffy. Add the vanilla extract and espresso powder, and mix until just combined.
In another bowl, whisk together the sour cream, flour, baking soda, and cocoa powder. Add this mixture to the mixer and mix on low until just combined.
Pour the batter into your loaf pan and bake for 45 minutes, or until a knife inserted comes out clean.
Once finished baking, rest for 10 minutes before turning out onto a wire rack to cool completely.
To make the glaze, melt together all the ingredients in a double boiler. Once melted, spread the glaze all over the cake. Leave to set before serving.
This Sour Cream Chocolate Pound Cake is truly a delicious treat. Its unique contrasting textures, flavors, and glazes pleasantly surprise the palate. Give it a try and you won’t be disappointed!
