Italian cuisine is renowned the world over, and this vegan dish brings out the best in Italian-style cooking because of its modern twist. By combining polenta with vegan substitutes, this polenta cake is an ideal way to satisfy your sweet tooth while vegan-friendly.

• ¾ cup vegan butter, softened
• 1 cup almond milk
• 2 teaspoons active dry yeast
• 2 tablespoons light brown sugar
• ¼ cup raw sugar
• 4 cups coarsely ground white cornmeal (polenta)
• 1 cup all-purpose flour
• 1 teaspoon baking powder
• ½ teaspoon baking soda
• ¼ cup vegan cream cheese
• ¼ cup sliced almonds

1. In a small bowl, combine the almond milk, yeast, and brown sugar. Leave to sit for about 10 minutes, until the mixture is frothy.

2. In a large bowl, whisk together the vegan butter and raw sugar until creamy.

3. Add the cornmeal and almond milk mixture to the butter and sugar, whisking until combined.

4. In a separate bowl, mix together the all-purpose flour, baking powder, and baking soda.

5. Fold the flour mixture into the cornmeal mixture until just combined. Take care not to overmix.

6. Grease a 9-inch springform pan. Pour the batter into the pan and spread evenly.

7. Bake at 350F for 35-40 minutes, or until golden brown and a toothpick inserted into the center comes out clean.

8. Let the cake cool for at least 15 minutes before slicing. Garnish with vegan cream cheese and sliced almonds.

This vegan polenta cake is like no other. The combination of cornmeal, vegan butter, and almond milk creates a unique, delicious taste. The cake is dense yet moist, perfect for a special treat. Serve as a dessert at a dinner party, or enjoy as an after-dinner snack.
