• ¾ cup vegan butter, softened
• 1 cup almond milk
• 2 teaspoons active dry yeast
• 2 tablespoons light brown sugar
• ¼ cup raw sugar
• 4 cups coarsely ground white cornmeal (polenta)
• 1 cup all-purpose flour
• 1 teaspoon baking powder
• ½ teaspoon baking soda
• ¼ cup vegan cream cheese
• ¼ cup sliced almonds

Instructions

1. In a small bowl, combine the almond milk, yeast, and brown sugar. Leave to sit for about 10 minutes, until the mixture is frothy.

2. In a large bowl, whisk together the vegan butter and raw sugar until creamy.

3. Add the cornmeal and almond milk mixture to the butter and sugar, whisking until combined.

4. In a separate bowl, mix together the all-purpose flour, baking powder, and baking soda.

5. Fold the flour mixture into the cornmeal mixture until just combined. Take care not to overmix.

6. Grease a 9-inch springform pan. Pour the batter into the pan and spread evenly.

7. Bake at 350F for 35-40 minutes, or until golden brown and a toothpick inserted into the center comes out clean.

8. Let the cake cool for at least 15 minutes before slicing. Garnish with vegan cream cheese and sliced almonds.
